Cooking healthy, creative meals for my family is a priority, but when you’re a busy mom, it can be a challenge. Planning ahead and baking dinner instead of standing by a hot stove to cook, is usually the better option. We want our kids to learn that “you reap what you sow." Making the healthiest meal choices will help them reap the benefits of peak performance in all aspects of life. Tonight’s dinner of baked fish, parboiled-baked veggies, and sliced red potatoes is high in colorful fibers, low in calories, and rich in minerals, iron, potassium, and nutrients.

Recipe for Parboiled Baked Veggies:
Ingredients-
•2 bags of frozen mixed veggies
•1 small onion
•1-3tablespoons of olive oil
•Salt and pepper to taste
Instructions:
Rinse veggies clean
Toss one tablespoon of olive oil in small pot with chopped onions and let veggies parboil for approx. 1 minutes. Then, coat the baking pan with 2 tblspoons of olive oil and pour parboiled veggies in the oven(375 degrees) for no more than 10 minutes.
Take out of oven and let cool for 5 min. before serving.
Recipe for Roasted Red Potatoes:
Ingredients-
•6-10 red potatoes
•1 small onion
•1-3 tablespoons of olive oil
•Salt and pepper to taste
Instructions:
Cut potatoes in 4’s
Rinse well
Coat the bottom of the baking pan with 1 tbs. of olive oil. Pour potatoes in the pan and drizzle olive oil on top of potatoes. Then, season with 1 tsp. of salt and pepper. Place in oven on 375 degrees and cook for approx. 50 minutes. Remove from oven when cooked and let potatoes cool for 5 min. before serving.
Recipe for Baked Fish:
Ingredients:
•1 pound of fish fillets(salmon or fish of choice)
•1 onion
•1-4 tablespoons of olive oil
•Salt and pepper to taste
Instructions:
Rinse fillets. Cut fine into 3-4 slices
Season to taste with salt(pref. sea salt) and pepper. Coat with olive oil. Coat bottom of baking pan and place cut fish fillets, chopped onions in pan in oven set at 375 degrees. Bake for approx. 40-50minutes. Remove from oven and let cool before serving.
